Bermunchies: Mama V’s banana bread

Bermudians seem to have an abundance of bananas in their kitchens. Nearly everyone has their own banana tree in their backyard or knows of someone who does. I seem to never have a chance to run out of them. How does one make use of all these bananas? Banana bread.
My mother makes the best I am convinced. Her recipe results in a perfectly moist and airy loaf, different from many traditional recipes. It’s pretty addicting to say the least. Her recipe is as follows:
Mama V’s Banana Bread
Ingredients
2 cups of ripe bananas (mashed)
3 cups of flour
2 eggs
1 cup of brown sugar
1 cup of vegtable oil
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp boiling water
Directions
1) Combine all wet ingredients in bowl
2) Sift all dry ingredients and add to wet
3) Add boiling water, mix well
4) Pour mixture into greased pan and bake at 350 degrees for approx 50 mins to 1 hr
5) Serve
Alternatively, you can add dried fruits, nuts or even chocolate chips to the batter before baking to add your own special touch. In my house we love to eat warm, toasted banana bread covered in nutella. Delicious!
If banana bread isn’t your cup of tea, try this recipe for Banana Custard I found in a classic Bermudian cookbook titled, ‘Bermudian Cookery’ published by the Bermuda Junior Service League.
Banana Custard
1 1/4 cups milk
1 egg
1 tbsp flour
1/4 cup Bermuda honey
2 ripe bananas cut into pieces
1/8 tsp salt
1/2 tsp vanilla
Directions
1) Dissolve the flour in 1/4 cup of milk
2) Heat the remainder of the milk and add the flour mixture; cook until slightly thickened
3) Add honey, salt, vanilla, egg and the bananas
4) Pour into glasses and chill
