In our second instalment of our Bermunchies Spotlight series, we get to know the lady behind Bermuda’s BEST chicken wings- yes they are THAT good! Today we highlight Dakia O’Brien; Chef and owner of Wild Wing Wednesday!

BM: Describe yourself in 10 words or less.

DO: A very determined and innovative individual.


BM: How long have you been interested in Culinary Arts?

DO: Since 2007/2008. So about 8 years.

 

BM: Did you further your studies overseas? If so where did you go and what did you study?

DO: Yes, I started off at St. Augustine's College in Raleigh NC, where I found a business program. I left after my first year to go to Johnson & Wales University in Charlotte, NC. I received my Associates Degree in Culinary Arts.



BM: Who would you say is your biggest culinary influence?

DO: I can't say that I have one in particular. I take a little bit from everyone. Each chef brings an inspiration in different ways. I will say I'm addicted to watching Diners, Drive ins and Dives! I love to see the creativity that restaurants have.

BM:  What is your biggest inspiration?

DO: Myself. Looking at how far I have come keeps me motivated on how far I can go; Also, the setbacks and success stories of others.



BM: Other than cooking, what else interests you?

DO: Movies, I love to watch old movies! I also like to spend time with my family. My two-year old Rhielle keeps me busy.



BM: Any particular reason why you chose to open a restaurant focused on wings?

DO: It's one of those things that just happened. After the Wild Wing Wednesday runs deemed successful, it was only a matter of time before we got the restaurant.

BM: What have been some of the highs and lows of opening your own restaurant?

DO: Highs would definitely be being selected for The Americas Cup World Series village. Lows, I'd rather not detail, but there are some. Running a business is never an easy thing and you will have trying times. You just can't live there.



BM: Other than your own, what restaurants in Bermuda do you like to eat at?

DO: Flanagans. Their fish is awesome. I'm also a big fan of Rustico and Madhatters.

 

BM: What advice would you give to a young Bermudian who dreams of opening their own restaurant or business in general?

DO: Do your research, and don't be afraid to ask for help. Also, never give up! Follow your own voice and you will be fine.



BM: What’s next for WWW?

DO: We are just about to celebrate our first year as a restaurant. But in the near future we will be working on a possible next location.
