Cooking with Chiko’s Smokey Rub

I love to experiment with new seasonings and ingredients when I cook so it was only right that i would add Chiko’s Smokey Rub to my spice cabinet. I first heard of this new spice blend through Facebook. After reading many positive testimonies I decided to hunt down a bottle for myself.
I managed to head down to Harbour Nights one night after work and realized that Chiko had his very own stand where he sold the rub. When we approached his booth he instantly offered us taste samples. The smokey blend is made up of 9 secret spices offering a hint of garlic, onion and red pepper creating a robust spice medley which would pair well with meats and vegetables.
I try to cook home made meals as much as possible, and with the constant hustle and bustle of work and all that life may bring, I take advantage of any time I have to make use of my little kitchen. With all the bad weather we had last weekend, it made for the perfect cooking environment. I had a piece of sirloin steak in the fridge that I had planned to make a stir-fry with and thought that the rub would pair well with the meat. I also made my special smoked paprika rice to eat along side it.
CHICO’S STIR-FRY BEEF WITH SMOKED PAPRIKA MEXICAN RICE
Stir-Fry Beef
INGREDIENTS
sirlion steak (cut into s)trips
1 yellow bell pepper
1 red onion
1 small head of broccoli
2 cloves of chopped garlic
olive oil
Chiko’s Smokey Rub
1/4 cup balsamic vinegar
1 tbsp honey
1/8 tsp red pepper flake
1 tsp lime juice
Salt + Pepper
DIRECTIONS
1. Cut up the steak into long strips against the grain and rub the meat with a little olive oil and a handful of Chiko’s spice mixture and let it sit covered in the fridge for about 5 hours to get as much flavour into the meat as possible.
2. Next prep your veggies and cut up the onions, bell pepper and broccoli into uniform chunks; set aside.
3. Prepare sauce mixture. In small bowl add balsamic vinegar, honey, red pepper flake, lime juice, and dash of the rub. Mix well and set aside.
3. Coat a skillet with olive oil and sauté the garlic until tender. Add steak and cook for 5 mins.
4. Add onions, peppers and broccoli and sauce mixture to skillet and cook for 5-7 mins or until veggies are tender. Be careful not to overcook as the broccoli may become mushy. Season with salt and pepper to taste
5. Serve with rice
Smoked Paprika Mexican Rice
INGREDIENTS
1 cup of brown rice
1/4 cup corn
1/4 black beans
1/2 can of diced tomatos
1 red bell pepper
1 small red onion diced
1 tbsp smoked paprika
1 tbsp tomato paste
2 minced garlic cloves
DIRECTIONS
1. Cook rice according to directions on package; set aside
2. In a large skillet saute onion, bell pepper and garlic in olive oil until tender; add smoked paprika and tomato paste and cook for 1 min to infuse spices into mixture.
3. Add corn, black beans, tomatoes and rice; cook for about 5-7 mins
4. Add salt and pepper to taste and serve
