#CookingWithRum: Black Rum Chili

We are back with another #CookingWithRum recipe!

If you don’t know by now, we love to eat our rum as much as we love to drink it (#TeamDarknStormy!). Now that the weather has cooled a bit, it is time to pull out my favorite culinary concoction- my crock pot!  A crock pot aka slow cooker is an amazing tool to have in your kitchen in the winter months for all of your soups, stews and pretty much anything! Take a stroll on Pinterest (we LOVE Pinterest) and you find thousands of recipes that use slow cookers as the sole tool. For this #CookingWithRum recipe, we made chili.

This chili recipe is super easy to make. All you need to do is prep a couple of ingredients, throw everything into your crock pot and leave it! SIMPLE! Here is what you’ll need:

 

INGREDIENTS

  • 1 lb of ground beef or turkey
  • 1 can of black beans
  • 2 cans of crushed or diced tomatoes
  • 1 large onion chopped
  • 1 jalapeno pepper diced
  • 3 cloves of garlic minced
  • ¼ cup of Goslings Black Seal Rum
  • 1 packet of chili seasoning
  • 1 Tablespoon of flour (used to thicken)

 

DIRECTIONS

 

  1. Sauté onions and garlic until tender- add ground beef or turkey and cook until brown. Doing this before adding the meat to the crock pot gives your chili lots of flavour so don’t skip it!                 
  2.  Once meat mixture is browned, add to crock pot. Then add a can of beans with the liquid, tomatoes, diced jalapeno and chili seasoning. If you like spicy foods leave the seeds in- if not make sure you remove them!                                                                                 
  3. Mix the chili mixture until it’s all combined- add the rum!                                          20151003 174048               
  4. Set the crock pot on high and let it do its thing for about 4 hours. Keep checking it and stir as time goes along. If you prefer a thicker chili, add 1 tbsp of flour about 3 hours into cooking time. This will give you a rich and thickened chili!Serve warm with a big chunk of sweet cornbread!

** NOTE- if you don’t own a crock pot you could definitely make this recipe in a regular pot on your stove! Just let the mixture simmer for an hour an you’ll get the same dish!
