#MeatlessMonday: Taco Potato Skins

Happy Monday Foodie Friends! Our friends at @freshnutz are back with a tasty #MeatlessMonday recipe that packs a flaourful kick into a healthy taco inspired dish! Try them out and let us know how you like them!
Taco Inspired Potato Skins
INGREDIENTS
- 6 medium sized potatoes (washed, scrubbed & dried)
Filling:
- Corn
- Beans
- diced tomatoes
- Jalapeño pepper
- Minced bell peppers
- Minced onion
- 1 packet of taco seasoning
Toppings:
- Guacamole & vegan cheese
DIECTIONS:
1. Preheat oven to 400 degrees F. Pierce clean potatoes with fork in a few places and wrap in aluminium foil. Bake for 1 hour (or until soft when squeezed.) When cool enough to handle, cut in half lengthwise and use a spoon to scoop out center leaving a little bit of flesh.
2. Brush both sides of potatoes with oil and place face down on lined baking sheet. Bake for about 20 minutes (or until skins start to crisp)
3. Meanwhile, add veggies, beans and seasoning(s) to a pan
3. Fill each skin with veggie mix. Bake for another 10 to melt (optional) cheese
4. Top with guacamole (optional)
