By: @eliizzyv Surinam Cherry and Walnut Bread

With cherry season hitting us at full force, we thought it would be a good idea to incorporate them into a sweet treat! So we went digging into our Bermudian cookbooks and struck gold with a recipe for Surinam Cherry and Walnut bread. We tried it out and loved the end result. If you like a lightly sweet but tart dessert this may be the perfect recipe for you!

Surinam Cherry and Walnut Bread

  • 1 cup sugar
  • 2 cups sifted flour
  • 3 teaspoons baking powder
  • 1 teaspoon cherry extract
  • 2 eggs
  • ½ cup of Surinam cherries (pitted and peeled)
  • ¼ cup walnuts

DIRECTIONS:

  1. Wash and pit cherries and strain to remove excess liquid. Set aside
  2. In a mixing bowl blend soft margarine and sugar until well blended
  3. Add one egg and one cup of flour. Mix thoroughly, then add second egg and cup of flour
  4. Add cherry extract and baking powder. Mix until well combined.
