Surinam Cherry and Walnut Bread

With cherry season hitting us at full force, we thought it would be a good idea to incorporate them into a sweet treat! So we went digging into our Bermudian cookbooks and struck gold with a recipe for Surinam Cherry and Walnut bread. We tried it out and loved the end result. If you like a lightly sweet but tart dessert this may be the perfect recipe for you!
Surinam Cherry and Walnut Bread
INGREDIENTS:
- ¼ pound of margarine
- 1 cup sugar
- 2 cups sifted flour
- 3 teaspoons baking powder
- 1 teaspoon cherry extract
- 2 eggs
- ½ cup of Surinam cherries (pitted and peeled)
- ¼ cup walnuts
DIRECTIONS:
- Wash and pit cherries and strain to remove excess liquid. Set aside
- In a mixing bowl blend soft margarine and sugar until well blended
- Add one egg and one cup of flour. Mix thoroughly, then add second egg and cup of flour
- Add cherry extract and baking powder. Mix until well combined.
- Once all ingredients are incorporated, add cherries and walnuts.
- Bake in greased 9x5 inch baking dish for approx. 1 hour at 35 degrees or until cake tester comes out clean. Allow to cool before removing from pan.
